CHOCOLATE CHIP COOKIES | |
2 c. butter 2 c. brown sugar 2 c. sugar 4 eggs 2 tsp. vanilla 24 oz. chocolate chips (semi-sweet) 1 (8 oz.) chocolate bar, shaved or shredded 4 c. flour 5 c. oatmeal (ground in blender) 1 tsp. salt 2 tsp. baking powder 2 tsp. baking soda 3 c. nuts (opt.) Cream butter and sugar in bowl. Butter should be softened but not completely melted. Add eggs and vanilla, mix thoroughly to get all lumps out. In separate bowl mix flour, oatmeal, salt, baking powder and baking soda. Combine both mixtures in a large bowl, mixing dough by hand. Blend in chocolate chips, shaved chocolate and nuts. (Fixins can be modified to whatever desired.) Bake at 375 degrees for 6 to 8 minutes. These cookies do not rise, so size on cookie sheet is size of baked cookie. Dough can be prepared ahead of time, rolled and frozen. Frozen dough can be microwaved whenever cookies are desired. Baked cookies can also be frozen. Cookies are best if stored in refrigerator and microwaved to get the fresh baked taste. |
