OATMEAL CRISPIES 
1 c. Crisco shortening
1 c. brown sugar, packed
1 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
3 c. quick cooking oats
1/2 c. finely chopped walnuts

Cream shortening, brown sugar, and white sugar. Add eggs and vanilla; beat well. Mix flour, salt, soda, and sift into creamed ingredients; stir in oats and walnuts. Divide dough into 3 logs. Wrap logs in waxed paper and refrigerate at least 1 hour or up to a week. Cut with sharp knife 1/2 inch thick. Place on lightly greased cookie sheet. Bake at 350 degrees for 9-12 minutes. Don't over bake.
