SKILLET HOT POTATO SALAD | |
3 lb. potatoes, boiled, drained, cool, peel & dice 1 pkg. (16 oz.) bulk sausage 1 lg. onion 13 3/4 oz. beef broth 2/3 c. vinegar 1 c. thin sliced celery 1/4 tsp. pepper 2 hard cooked eggs, chopped 1/3 c. sliced olives 1 tsp. salt Cook sausage until browned. Add onion and cook 10 minutes. Add broth and vinegar. Simmer 5 minutes. Add potatoes, celery, salt and pepper. Sprinkle with eggs and olives. |
