ZUCCHINI CUSTARD | |
5 c. shredded zucchini (packed) 1 1/4 tsp. salt 1 c. shredded cheese 1/8 tsp. pepper 1/8 tsp. garlic powder 1/4 c. chopped parsley 1/4 c. prepared biscuit mix 4 eggs, well beaten 1 tbsp. butter Sprinkle shredded zucchini with salt and set aside for 1 hour. Turn into colander and press out liquid. Combine zucchini, cheese, pepper, garlic powder, parsley and biscuit mix. Stir in well beaten eggs until well blended. Melt butter in large frying pan or casserole. Pour in zucchini mixture and bake at 350 degrees for 30 to 45 minutes. Stir halfway through cooking. |
