BEEF STROGANOFF 
1/4 lb. fresh mushrooms, sliced
1 lg. onion, chopped
2 lb. round steak
1/4 c. butter
Flour
1 tsp. salt
1 tsp. white pepper
1 1/2 c. consomme
1 c. sour cream

Saute mushrooms and onion in 1 tablespoon butter and remove from pan. Cut steak into strips and coat with flour. Brown in 3 tablespoons butter. Add salt, pepper and consomme to mixture. Simmer, stirring occasionally until meat is tender, about 1 hour. Add onions, mushrooms and sour cream. Heat, but do not boil. Serve over wild rice.
