TEMPURA VEGETABLES 
Fresh vegetables (your choice):

broccoli
cauliflower
onions
asparagus
mushrooms
green beans

Batter:

1 c. all-purpose flour
1 c. ice water
1 egg, beaten
2 tbsp. oil
1/2 tsp. sugar
1/2 tsp. salt

Wash your choice of fresh vegetables that have been cut into bite-sized pieces. Dry thoroughly. Then just before using make batter by beating together flour, ice water, egg, oil, sugar and salt until well moistened (a few lumps should remain). Keep batter cool with a few ice cubes in batter. Dip vegetables in batter. Cook in deep hot fat at 360-365°F until tender and light brown. Skim off any batter on surface of fat. Serve immediately. Can be used as an appetizer also.
