TEMPURA BATTER 
2 egg whites
1 cup all-purpose flour
2/3 cup cold water or soda water
1/4 teaspoon salt
1/2 teaspoon sugar (optional)
1/4 teaspoon baking powder (optional)

In a small bowl, beat egg whites until foamy.

Fold in flour gradually with cold water and remaining ingredients, gently so as not to deflate the foam and mixing for just a few seconds.

Dip small pieces of fruit, vegetables, meat or seafood into flour, then dip to coat in batter.

Fry briefly (90 seconds or so, depending on the size of the piece) in hot vegetable oil heated to 360-375°F - again, depends upon size of items being fried.
