MEXICALI COMBO 
2 lb. sliced zucchini squash
1 lb. ground beef
Salt
Black pepper
Garlic powder
1 onion, finely chopped
1 lb. cooked rice
1 can chopped green chilies
1 egg, slightly beaten
1 c. cottage cheese
1/4 c. Parmesan cheese
1 c. Cheddar cheese, fine grated

Cook zucchini in salted water about 56 minutes. Drain and set aside. Cook meat seasonings and onions until meat is no longer pink and onions are tender. Add rice, green chilies and zucchini. Blend eggs, cottage cheese and Parmesan cheese. Stir into meat mixture. Grease pan. Top with grated Cheddar cheese. Bake in oven at 350 degrees for 30 minutes.
