CHICKEN - ALMOND CASSEROLE 
4 c. cubed cooked chicken or turkey
1 (4 oz.) can mushrooms, drained
1 (5 oz.) can water chestnuts, drained & slivered
2/3 c. blanched whole almonds
1 med. onion, minced (about 1/2 c.)
Chicken sauce
Paprika

Heat oven to 350 degrees. Spread 1/2 of chicken in ungreased baking dish, 11 1/2 x 7 1/2 x 1 1/2 inches or 2 quart casserole. Top with mushrooms, almonds and onion. Arrange remaining chicken on top. Pour Chicken Sauce over top. Add paprika.

CHICKEN SAUCE:

1/4 c. chicken fat or butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1 c. chicken broth
3/4 c. milk
2 tbsp. sherry

Bake casserole (uncovered) for 45 minutes at 350 degrees.
