CHICKEN CASSEROLE 
1 (3 lb.) broiler, cooked
1 c. sliced celery
2 tsp. chopped onion
1/2 c. walnuts
1 to 1 1/2 c. cooked rice
1 can cream of mushroom soup
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. lemon juice
3/4 c. mayonnaise
1/4 c. water
2 to 3 hard-boiled eggs
2 c. crushed potato chips

Combine first 9 ingredients in large bowl. Mix mayonnaise with water and add to chicken mixture. Gently stir in egg slices. Turn into greased 9 x 12 inch casserole. Top with crushed potato chips. Bake at 375 degrees for 20 to 30 minutes or until bubbly. If prepared ahead, refrigerate, then bake for 40 minutes.
