YAM APPLE SCALLOP | |
4 med. size yams 3 med. apples, cored and cut in rings 1 tsp. lemon juice 1/2 c. brown sugar, firmly packed 1 tsp. salt 1/2 tsp. mace 1/2 tsp. cinnamon 1/2 c. chopped pecans 2 tbsp. butter, melted Wash yams, cut in half lengthwise and place, without drying, in a plastic bag. For easier turning, place bagged yams on a plate. Microwave on High for 10 minutes. Turn plate once or twice. Peel cooked potatoes and cut in flat lengthwise slices about 1/2 inch thick. Arrange a layer of yams in a buttered 9 or 10 inch round dish. Add a layer of sliced apples. Then sprinkle with 1/2 teaspoon of the lemon juice. Mix together brown sugar, salt, mace, cinnamon and pecans. Cover apples with half of mixture and drizzle on half of the butter. Repeat layers of potatoes and apples, sprinkle with remaining lemon juice and cover with remainder of brown sugar mixture. Add remaining butter. Cover with plastic wrap and microwave on High for 15 minutes. Turn dish 2 or 3 times. |
