CHEESY YORKSHIRE CHICKEN 
2 tbsp. + 2 tsp. corn oil
1 (2 1/4 lb.) chicken, cut in pieces
3/4 c. all-purpose flour
3/4 tsp. baking powder
1/2 tsp. salt
1 c. evaporated skim milk
2 eggs, beaten
2 oz. grated cheddar cheese
2 tbsp. minced onions
2 tbsp. parsley flakes

Preheat oven to 400 degrees. Place oil in 12" round casserole with 3" sides; add chicken pieces and turn to coat with oil. Bake for 40 minutes or until fork tender.

Yorkshire Pudding: In medium bowl, sift flour, baking powder and salt. Beat in milk and eggs then fold in remaining ingredients. Remove chicken from oven, pour pudding mixture over chicken. Return to oven and bake 20 minutes until puffed and brown.
