SPINACH SALAD 
2 pkgs. fresh spinach, rinsed and stems removed
2 hard boiled eggs, chopped coarsely
1/2 lb. bacon, fried crisply and crumbled
1 Bermuda onion, sliced very thinly

DRESSING:

1 tsp. salt
1 tbsp. cornstarch
2 eggs, beaten well
1/2 c. sugar

Mix first 3 ingredients in a saucepan. Gradually add 3/4 cup vinegar and 1/4 cup water. Cook over medium heat, stirring constantly, until thick. Cool, then mix with equal amount of mayonnaise. Toss spinach and other ingredients with dressing. Can be served hot or cold.

The dressing can be used on broccoli, potato salad or cole slaw.
