CHEESE COOKIES 
1 lb. sharp Cheddar cheese, grated
1 lb. butter, softened
3 tsp. salt
2 tsp. ground red pepper
1 c. yellow corn meal
6 c. flour

Mix cheese with butter. Add salt, pepper, and corn meal; mix with hands. Gradually work in flour. Mixture will become very stiff and leave the sides of bowl. Roll out dough to about 1/8 inch thick, cut with biscuit or cookie cutter. Dough can also be formed into logs, wrap in wax paper, chill, and slice. Place on ungreased cookie sheets and bake at 325 degrees for 15-25 minutes. Do not allow to get too brown.

NOTE: Wax paper wrapped logs can be kept in refrigerator for 6 weeks before baking. For spicier cookies, add 1 to 3 more teaspoons of pepper.
