EASY RICE PUDDING 
1/2 c. rice
1/2 c. water (enough to cover rice)
1 tbsp. butter
1/4 tsp. salt
2 1/2 c. milk
1/3 c. sugar
2 eggs
1/2 tsp. vanilla
1 tsp. cornstarch
1/2 c. raisins

Cover rice with water and boil until water is gone. Add milk, sugar, salt and butter and simmer until rice is cooked. Beat eggs along with 1 tablespoon milk and cornstarch. Then stir a little hot mixture into them. Add slowly to keep eggs from curdling. Pour egg mixture into milk and rice. Stir until well blended. Add vanilla. Can be served hot or cold.
