CREPES 
1 1/2 c. flour (all-purpose)
1 tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
2 c. milk
2 eggs
1/2 tsp. vanilla
2 tbsp. butter (melted)

Put flour, sugar, baking powder and salt in bowl. Stir in remaining ingredients. Beat until smooth.

Lightly butter 8 inch skillet - medium heat. Pour scant 1/4 cup batter into skillet. Rotate until batter covers bottom. Cook until light brown. Turn, brown on 2nd side.

While warm spread applesauce, jam/jelly, fruit or....thinly on crepe. Roll. Coat with confectioners' sugar.
