CHICKEN CACCIATORE WITH GREEN
BEANS
 
1 tsp. vegetable oil
1/4 c. each chopped onion/green bell pepper
1 garlic clove, minced
1/2 lb. chicken, 1 inch cube
1/2 c. canned tomatoes, drained and chopped
1/2 c. cut green beans
1/4 tsp. oregano
1/8 tsp. salt

Heat oil in 10 inch skillet - medium heat. Add onion, pepper, garlic and saute 1 to 2 minutes. Add chicken and saute (no longer pink about 5 minutes). Stir in tomatoes, beans, seasonings. Reduce heat to low and simmer, stirring occasionally. (5 to 8 minutes)
