MEXICAN TACOS 
1 lb. ground meat
10 corn tortillas
1/2 c. cooked pinto beans (or equiv. cooked Irish potatoes)
Little bit of salt, black pepper & chili powder
1/4 c. chopped onion
1 sm. can taco sauce
Chopped lettuce
Grated Cheddar cheese

Cook ground meat until done. Cook onion until soft. Remove onion and meat from skillet. Mix all ingredients. Pour a little oil in skillet, heat to moderate temperature, place tortillas in oil until hot, soft and pliable. Fill with meat mixture and fry in hot oil. Keep tacos hot in toaster oven until served.

To serve: Place chopped lettuce and grated cheese in tacos and serve additional sauce.
