MEXICAN MEATLOAF 
2 lbs. ground beef
1/2 c. fine dried bread crumbs (I use quick oatmeal)
1 tbsp. minced instant onion (I just slice onion and cut up fine)
1/2 c. finely chopped green pepper
1 1/2 tsp. salt
Dash of pepper
Dash of garlic powder
2 eggs beaten
1 (7 oz.) can (1 c.) canned tomatoes or sauce
3 tsp. chili powder

Combine meat and bread crumbs, onion, green pepper, salt, pepper, chili powder and eggs. Break tomatoes with fork; add to meat mixture. Mix well. Place in loaf pan. Bake at 350 degrees about 1 hour 15 minutes or until done.
