BROCCOLI CASSEROLE 
6 tbsp. butter
2 tbsp. flour
1/2 c. finely chopped onion
8 oz. jar Cheez Whiz
3 eggs
2 pkgs. frozen chopped broccoli or spinach or green beans

Cook broccoli according to package directions and drain thoroughly. While this is cooking, melt butter in skillet, add onion and cook over low heat until onions are clear and soft. Add flour and cook until blended well with onion and butter. Remove from stove and add Cheez Whiz and drained broccoli.

Beat eggs well and stir carefully into broccoli mixture. Pour into a well greased 1 1/2 quart casserole dish and bake in a 300 degree oven for at least 45 minutes. Test for doneness as you do a custard, using silver knife in center of dish, if knife comes out clean, the casserole is done.

This recipe is for 8, can easily be doubled, keeps well so can be fixed early and kept warm for dinner.

Top with bread crumbs before baking.
