MOTHER'S GINGERBREAD BANANA
SHORTCAKE
 
3 tbsp. shortening
1/2 c. sugar
1 egg
1/2 c. molasses
1 3/4 c. flour
1 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1/2 c. boiling water

Sift dry ingredients together. Mix shortening and sugar. Add egg and beat well. Stir in molasses and add dry ingredients and boiling water. Bake at 350 degrees for 25-30 minutes. While slightly warm cover with whipped cream and sliced bananas.
