CALYPSO CHICKEN 
1 tbsp. sugar
1 tsp. ginger
1 tsp. dry mustard
1/2 c. canned apple juice
1/3 c. soy sauce
1/4 c. bottled or canned lemon juice
3 cloves garlic

Mix sugar, dry mustard and ginger. Add apple juice, soy sauce, lemon juice and garlic (crushed). Mix well. Pour over chicken. Let marinate several hours or overnight (overnight best). Drain chicken on paper toweling. Brush chicken with salad oil. Put in grill basket, sprinkle with salt. Put on spit until done (approximately 2 hours, depending on size of chicken).
