HOT SAUSAGE POTATO SALAD 
4 slices bacon
1/4 c. chopped onion
1 tbsp. flour
2 tbsp. sugar
1/4 tsp. celery seed (optional)
Dash of pepper
3/4 c. water
1/4 c. vinegar
6 lg. potatoes, cubed and cooked until done
1 Polish sausage, bias sliced in 1/2 inch pieces
1 tbsp. parsley

Peel potatoes, cube and cook until done in salted water; don't over cook. While potatoes are cooking in a large fry pan, cook bacon, crumble and set aside. Drain off all but 1 tablespoon bacon fat and saute onion in it. Add next 6 ingredients, one at a time, and bacon crumbles. Simmer for 1 minute. Add sausage slices and simmer until it is heated through.

Drain potatoes and add them and parsley to fry pan and mix until all is coated and heat through for a minute or two more. Serves 4 to 5.

NOTE: Tough skin can be taken off sausage. This can be made ahead of time and heated in oven before serving.
