SHREDDED POTATOES AU GRATIN 
6 c. shredded potatoes (make your own or can be bought in dairy section of grocery store)
2 c. (8 oz.) sharp cheese, shredded
2 c. evaporated skim milk
2 tsp. salt
1/4 c. soft bread crumbs
1 tbsp. butter, melted
1 sm. onion, finely chopped
Pam

Cook potatoes and onion in microwave for 10 to 15 minutes. Drain well and salt. Alternate 2 layers of potatoes and cheese in a Pam sprayed 2 1/2 quart casserole. Pour milk over layers and sprinkle with bread crumbs and drizzle with butter. Bake at 350 degrees for 45 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
