VEGETABLE QUICHE 
1 (9 inch) baked pie shell
1 c. half and half or milk
1/2 tsp. crushed oregano leaves
3/4 to 1 c. drained, cooked mixed vegetables
1/2 c. (2 oz.) shredded Cheddar cheese
6 eggs
1 tbsp. instant minced onion
1/2 tsp. salt

(Frozen or canned or leftovers or just 1 particular vegetable such as broccoli, asparagus, corn or cauliflower.)

Sprinkle vegetables and cheese into pie shell. Beat together remaining ingredients until well blended. Pour over vegetables and cheese. Bake in preheated 375 degree oven until knife inserted comes out clean -- 30 to 40 minutes. Let stand 5 minutes before serving.
