KIRSCH FRUIT DESSERT
This is an excellent light dessert for a company meal that can be made in advance. Use fresh fruits such as bananas, grapes, berries, kiwis, peaches or apricots when in season, blended according to availability and your taste. When a variety is not available, use frozen and-or canned fruit. Preparation time: 15 to 20 minutes. Marinating time: 3 hours or more.

FOR 4 SERVINGS YOU WILL NEED:

2 c. fresh, frozen or canned fruits, cut into 1-inch pieces
4 tbsp. Kirsch or clear cherry flavored liqueur
1 tbsp. grenadine syrup
1 pt. raspberry sherbet

1. Mix fruit with grenadine syrup and Kirsch in glass bowl or jar. Cover, and refrigerate for 3 hours or more for flavors to blend.

2. When ready to serve, divide mixture between 4 dessert dishes.

3. Top each serving with a scoop of raspberry flavored sherbet.

4. If desired, you may garnish the dessert with a mint leaf; however, if a variety of colorful, contrasting fruit is available, omit the mint.

TIPS: You may keep a container of fruit marinating in the refrigerator for quick to make desserts; simply refresh fruits and add more grenadine and Kirsch as needed.

Good serve with: Coffee and butter cookies. FOR 2 SERVINGS: half of the ingredients. FOR 8 SERVINGS: Double the ingredients.
