MIXED VEGETABLE CASSEROLE 
1 (20 oz.) pkg. California blend frozen vegetables
1 (8 oz.) box Velveeta cheese, cubed
6 tbsp. melted butter
1 tube Ritz crackers, crushed into crumbs

Cook vegetables and drain. Layer vegetables and cubed cheese in a casserole. Mix butter and cracker crumbs, then sprinkle over top. Bake at 350 degrees for 25 minutes.
