ZUCCHINI CARROT BREAD 
3 eggs
1 c. oil
1 1/2 c. brown sugar
1 c. zucchini, grated
1 c. carrots, grated
2 tsp. vanilla
2 1/2 c. whole wheat flour
1/2 c. All Bran
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon

Beat eggs with oil. Stir in sugar, zucchini, carrot and vanilla. Mix together flour, bran, salt, soda and cinnamon. Stir in zucchini mixture. Add nuts or raisins if desired. Mix well. Bake at 350 degrees for 1-1 1/2 hours. Yield 2 loaves.
