MY OWN APPLE SAUCE CAKE
1 c. raisins
1/2 c. butter
1 c. sugar
1 tsp. vanilla
1 egg
1 tsp. salt
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves, if desired
3/4 c. chopped nuts
3/4 c. chopped dates
1 (15 oz.) jar apple sauce

Cover raisins with boiling water and let stand 5 minutes, then drain. Cream butter, add sugar and vanilla. Cream until fluffy. Add egg and beat well. Sift dry ingredients, add to creamed mixture alternately with apple sauce. Add raisins, dates and nuts. Mix well. Bake in a well-greased, floured 5x13x3 inch pan about 45 minutes to an hour.

Cool slightly and remove from pan. This cake improves in flavor and texture on standing, wrapped for one day before serving. 3/4 cup of mixed candied fruit may be added to make a fruit cake.
