ZUCCHINI MARMALADE 
5 c. shredded and peeled zucchini
2 sm. cans crushed pineapple
4 c. sugar
1 lemon rind, grated

Mix together and let set overnight. In the morning, add juice of 2 lemons and 1/2 teaspoon salt. Bring to a boil and simmer to the preferred consistency.
