MARMALADE 
6 c. zucchini, chopped
6 c. sugar
1/4 tsp. ginger
1 tbsp. grated lemon peel
1 tbsp. grated orange peel
1/2 c. lemon juice
1 sm. c. lemon juice
1 (1 1/4 lb.) can pineapple, undrained

Cook for 1-2 hours. Simmer and add 1 large package of orange Jello. Makes about 3 pints.
