OLD FASHIONED PEANUT BUTTER COOKIES | |
2 1/2 c. unsifted flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 1 c. butter 1 c. chunk or smooth peanut butter 1 c. sugar 1 c. brown sugar 2 eggs 1 tsp. vanilla Stir first 4 ingredients set aside. In large bowl, beat butter and peanut butter until smooth. Beat in sugars blend well, then eggs and vanilla, add flour mixture beat until well blended. Separate dough into two or three parts, roll dough on wax paper into a log. Wrap in plastic film lay on pan chill in refrigerator 4 hours or overnight. With sharp knife cut logs into about 3/8 inch slices. Place 2 inches apart on cookie sheets, "ungreased" flatten slightly with fork. Decorate if desired. Bake at 350 degrees 10 to 12 minutes until lightly browned. Remove from sheet, cool. Makes 6 dozen. |
