PASSOVER BLINTZES 
3 eggs
1/2 tsp. salt
3/4 c. cake meal
1 1/2 c. water (approx.)

FILLING:

1 egg
1 lb. cottage or pot cheese and farmer cheese mixed
1 tbsp. sour cream
1/2 tsp. sugar
1/2 tsp. salt

Beat eggs and salt. Add cake meal and water alternately. Batter should be thin. Put 3 tablespoons of batter in hot greased 8 inch frying pan, spreading as thin as possible. Fry until golden brown on one side. Turn to a plate with browned side up. Spread with cheese filling, fold sides up and fry or bake in oven. Serve with sour cream.

Makes 16 blintzes.
