SODA CRACKER PIE 
Beat three egg whites with 1/2 teaspoon cream of tartar. Add slowly 1 1/2 cups sugar. Beat until stiff. Fold in 1 cup chopped nuts and 18 soda crackers, crushed fine. (I use unsalted crackers.) Add 1 teaspoon vanilla. Put in greased pie pan and bake 35 minutes at 350 degrees. Spread Cool Whip on cooled pie. Then add 4 teaspoons pineapple preserves over Cool Whip. Sprinkle with coconut.
