COUNTRY PIE 
1 lb. lean ground beef
1/2 c. fine bread crumbs
1/4 c. finely chopped onion
1/4 c. finely chopped green pepper
1 1/2 tsp. salt
1/4 tsp. pepper
Tomato wedges (opt.)
2 (8 oz.) cans tomato sauce
3/4 c. cooked reg. rice
1/2 c. shredded cheese
2 slices American cheese, cut diagonally
Fresh parsley sprigs (opt.)

Combine first 6 ingredients and 1 (8 ounce) can of tomato sauce; mix well. Spread meat mixture into a 10 inch pie pan; mold to sides of pan to form a shell.

Combine rice, shredded cheese and remaining tomato sauce, stirring well. Spoon rice mixture into meat shell. Arrange cheese slices over top of rice mixture. Bake at 350 degrees for 30 to 40 minutes or until meat is done. Garnish with parsley and tomato wedges, if desired.
