JAMAICA LIMBO PLANTAIN 
1 lg. green plantain, cut in 1/2" thick rounds
1 pt. water, salted in 4 full tsp. salt

Steep plantain in salted water for about 1 hour. Have a skillet well heated with sufficient oil to cover the slices of plantain. Fry slices lightly for a few minutes on both sides taking care not to brown. Fry over medium heat.

Remove from skillet. Drain on paper towel. Place between two sheets of wax paper and flatten each round with rolling pin. Return flattened plantain to skillet and brown until nice and crisp. Dust with salt. Makes an excellent cocktail snack.
