AKA Ripe Plantains in Heavens. 2 ripe, soft plantains 2 cups milk 1/4 cup sugar 4 tbsp. shredded cheese 1 tbsp. cornstarch 1/2 tsp. cinnamon 1 tbsp. butter cooking oil 1/2 tsp. vanilla Cut plantains in slanted slices and fry in hot oil until they are golden. Mix the sugar, cornstarch and ground cinnamon; add milk, shredded cheese and vanilla. Mix thoroughly. Grease a Pyrex or oven-safe dish with 1/2 tablespoon of butter. Pour in half of milk mixture and other ingredients. Place fried slices of plantain on top. Cover with remaining milk mixture and dot with butter. Bake in oven at 350°F for 30 minutes or until cheese is just melted. |
