CREAM OF BROCCOLI SOUP 
1 bunch fresh broccoli
4 tbsp. butter
6 tbsp. flour
5 c. chicken broth
Salt & pepper
1/2 c. heavy cream
1/2 c. milk
1/4 tsp. nutmeg

Cut up broccoli in small pieces, halve or quarter stems. Steam 5 to 8 minutes. Melt butter in saucepan, add flour. Blend with whisk. Cook but do not brown. Add chicken broth gradually mixing well. Add large pieces broccoli and stems. Cook (simmer) stirring occasionally for 10 minutes. Add soup to blender jar about 1/3 at a time. Blend until smooth. Return to pan. Add remaining ingredients. Heat but do not boil. Serve with broccoli garnish or grated cheese. Add 1/3 of a red onion to recipe if desired.
