PEANUT BUTTER AND JELLY COOKIES 
1/2 c. peanuts
1/2 c. shortening (butter)
1/2 c. peanut butter
1/2 c. granulated sugar
1/2 c. brown sugar, packed
1 egg
1 1/4 c. self rising flour
Jelly or jam

Mix thoroughly shortening, peanut butter, granulated sugar, brown sugar and egg. Blend in flour. Cover and chill. Heat oven to 375 degrees. Shape dough into 1 inch balls. Roll in 1/2 cup finely chopped peanuts. Place about 3 inches apart on lightly greased baking sheet; press thumb deeply into center of each ball. Bake 7 to 10 minutes or until set but not hard. Spoon small amount of jelly or jam into each thumbprint. About 3 1/2 dozen cookies.
