LUTEFISK PUDDING | |
1/2 c. rice 1 c. water 1 tsp. salt 1 1/2 tsp. butter May bake, covered, in oven or on top of stove until liquid is absorbed and rice is tender. Add rice to 1 cup milk and 2 beaten eggs. Add 3 1/2 cups cooked, flaked lutefisk and 2 tablespoons butter. Season with salt and pepper. Put into buttered baking dish and bake until set, 30 to 40 minutes. |
