PEACH COBBLER | |
FOR THE DOUGH: ix together: 1 1/2 c. flour 1/2 c. shortening 1 tsp. baking powder 1/2 c. milk Dash salt (I put 1/2 tsp.) Roll out dough and spread with 2 cups fruit. Roll up jelly roll style and cut into 15 one inch sections. Melt 1 stick butter in 9x13 pan and lay the cut pieces on the butter. (Don't worry about not having enough - they swell during cooking.) Mix and dissolve 1 1/2 cups sugar in 2 cups juice from drained fruit, adding water if necessary to make the 2 cups liquid. Pour juice and sugar mixture over the dough sections and bake until light brown in 400 degree oven, about 45 minutes to 1 hour. To serve top with ice cream or whipped topping. You may use frozen, fresh or canned fruit but for fruit not already sweetened, add 1/2 cup more sugar. I added pears or peach nectar when I use either of these fruits. When making pear fruit, I use 1 can pear nectar and 2 small cans pineapple juice for my liquid and cinnamon and very little allspice. |
