PIKE'S PEAK PEACH COBBLER 
3 c. sliced peaches, canned or fresh
1/4 c. plus 3 tbsp. granulated sugar
1 tbsp. lemon juice
1 tsp. grated lemon peel
1 tsp. almond extract

DOUGH:

1 1/2 c. all-purpose flour
1/2 tsp. salt
1 tbsp. baking powder
1/3 c. shortening
1/2 c. milk
1 egg

Arrange peaches in well-buttered 8-inch square pan or deep casserole; sprinkle with mixture of 1/4 cup granulated sugar, lemon juice, lemon peel, and almond extract. Heat peaches in 375 degree oven while preparing dough.

DOUGH: Combine flour, salt, baking powder and 1 tablespoon granulated sugar, cut in shortening until crumbly. Add milk and egg; stir just until well moistened. Spoon small dollops of dough over hot peaches and spread dough; sprinkle with 2 tablespoons granulated sugar. Continue baking in 375 degree oven about 40 minutes. Serves 6.
