MANICOTTI 
1 box (14) manicotti shells
15 oz. Ricotta cheese
8 oz. Swiss cheese, shredded
8 oz. Mozzarella cheese, shredded
1/2 c. sour cream
1 tbsp. chives
1 lb. ground beef
32 oz. spaghetti sauce
Salt and pepper
8 oz. mushrooms
Grated Parmesan cheese

Combine Ricotta, Swiss and Mozzarella cheese. Mix with sour cream and chives; set aside.

Brown ground beef; add spaghetti sauce, salt and pepper to taste.

Fill manicotti shells with cheese mixture (try your cookie press). Spread a little sauce on the bottom of a 9x13 inch pan, then layer filled shells (uncooked). Cover with meat sauce, then mushrooms. Sprinkle grated Parmesan cheese over top. Cover with foil; bake at 350 degrees 1 hour, then uncover; bake 10 minutes.
