MOLDED CHERRY SALAD 
1 (3 oz.) pkg. cherry flavored gelatin
3/4 c. boiling water
1 c. orange juice
Pitted and halved fresh sweet cherries (about 3/4 c.)
1 c. cream style cottage cheese
1 c. pitted and sliced fresh sweet cherries
Lettuce, optional, for garnish

In a medium mixing bowl, combine the cherry flavored gelatin with the boiling water; stir until completely dissolved. Add the orange juice, stir and then chill until slightly thicker than raw egg white.

Arrange pitted and halved cherries, rounded side down, in the bottom of a 1 quart mold. Pour chilled gelatin mixture over cherries to just about cover them. Chill until gelatin is set but not firm.

Combine remaining gelatin mixture with the cottage cheese and sliced cherries. Spoon over chilled gelatin in mold. Chill until firm (at least four hours) and unmold on lettuce lined plate. Makes 6 servings.
