PEAR RELISH 
1 gallon ground pears
8 c. ground onions
8 bell peppers
2 hot peppers (or to taste)
2 qts. white vinegar
2 1/2 tsp. salt
3 tbsp. dry mustard
6 tsp. allspice
2 tsp. cloves
2 tsp. cinnamon
2 tsp. turmeric
4 c. sugar

Peel pears before grinding. Mix ingredients and bring to boil. Simmer 15 minutes. Pack into jars to within 1/2 inch of top. Put on caps; screw band firmly tight. Process in boiling water bath 5 minutes. Yield: 10 pints.
