1 med. orange 1/4 c. raspberry jam 2 (2 1/2 inch) cinnamon sticks 1 (6 oz.) can frozen orange juice 8 firm pears Raspberries Peel and core pears. Peel orange and scrap 2 teaspoons worth of the white membrane from the skin and save. In 5 quart saucepan squeeze orange and add membrane, raspberry jam, cinnamon sticks, frozen orange juice and pears. Bring to a boil, reduce heat and simmer for 15 to 20 minutes. Remove pears and bring back to a boil stirring often, sauce will thicken approximately 1/2 hour. Pour sauce over pears, refrigerate for 3 hours. Pears can be made 3 days in advance and can be served hot or cold. Great for holiday dinners. |
