1 lb. ground beef 1 pkg. (1 1/4 oz.) taco seasoning mix 1/2 c. water 1 jar (8 oz.) processed cheese spread (Cheez Whiz) 6 flour tortillas 1/2 c. sour cream 1 tbsp. milk 1/4 c. ripe olives, sliced 1 sm. tomato, chopped 1 c. lettuce, finely chopped Crumble ground beef into 1 quart glass mix'n pour bowl. Microwave HIGH, uncovered for 5-6 minutes, or until no longer pink, stirring once. Stir to break meat into small pieces; drain. Stir in seasoning mix and water. Microwave HIGH uncovered for 3-4 minutes, or until boiling, stirring once. Stir in half the jar of cheese spread until melted. Place scant 1/2 cup meat mixture down center of each tortilla. Roll up with filling inside. Place seam-side down in 8x12 inch microwave-safe baking dish. Set aside. Microwave HIGH remaining cheese spread in uncovered jar 30 to 45 seconds or until melted, stirring once. Pour over tortillas. Microwave HIGH uncovered for 2-3 minutes or until heated through. Combine sour cream and milk; spoon over tortillas. Top with olives, tomato and lettuce. Serves about 6 persons. Tip: Recipe can be prepared ahead through step 5. Cover and refrigerate. Increase time in steps 6 to 7-8 minutes, rotating dish once. |
