TURKEY DRESSING 
1/2 lb. pork sausage
1 c. chopped onions
1 1/2 c. chopped celery
1 loaf day old bread, cubed
1 stick butter
Turkey giblets
Salt & pepper
Poultry seasoning

Cook giblets for a couple hours in water. Fry the sausage until well done, but not hard. Spread over paper towel to absorb grease. Add 1 stick butter to pan with sausage drippings. Add onion and celery to same pan. Cook until soft; 10 minutes or so. With hands work bread cubes into onion-celery mixture. Add juice from cooked giblets to moisten (approximately 1 cup juice). Cut up giblets and add to mixture. Add salt, pepper, poultry seasoning to taste. Cook inside or outside of turkey.
