GINGERSNAP CHEWS 
3/4 c. sugar
1 1/2 c. flour
1/2 c. shortening
1 egg
3 tbsp. light molasses
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. cloves

Combine in mixing bowl. Blend together until dough forms. Press into bottom of greased 13 x 9 inch pan. Brush with water; sprinkle with sugar. Bake at 350 degrees for 20 to 25 minutes. Cool; cut into squares.

HONEY SPICE CHEWS: Use honey instead of molasses. Add 1/4 teaspoon cardamom, if desired.

BROWN SUGAR CHEWS: Use brown sugar instead of white sugar and light corn syrup rather than molasses. Add 1 teaspoon aniseed.
