SOUFFLE - STUFFED CATFISH
FILLETS
 
4 tbsp. butter, melted
2 tbsp. lemon juice
6 catfish fillets (2-2 1/2 lb.)
3/4 c. cheese cracker crumbs
1 (12 oz.) pkg. frozen spinach souffle
1/2 c. creamy buttermilk salad dressing

Combine butter and lemon juice; brush on both sides of fillets. Roll in cracker crumbs. Cut frozen souffle into 6 equal squares. Place 1 piece of souffle cross-wise in the center of each fish fillet; fold ends over souffle. Pour salad dressing over bottom of 8 x 12 x 2 inch baking dish. Place fish fillets, seam side down, in dish. Bake at 375 degrees for 35-40 minutes or until fish flakes easily when tested with a fork. Makes 6 servings.
